Jill’s Flatbread with many variations16th October, 2023
My time allocated to cooking has decreased lately, therefore, I’m sure my quick flatbread recipe will appeal to a lot of you 🙂
Add in a bowl, mix, squish, bake and eat!!! Oh but please remember to chew each mouthful at least 24.6 times or our Naturopath Sheena will have something to say about it! “You may as well be throwing it down the toilet as you’re not absorbing any nutrition”…something along those lines…love you Sheena x

Place in a small bowl:
1 heaped Tbs tahini
2 heaped Tbs coconut yoghurt
3/4 C grated mozzarella
1/2 C grated parmesan
1/2 C Flax,Hemp & Chia Meal *
1/2 C Super seed blend meal *
sprinkle of salt, garlic powder, dried herbs or any spice if so desired
Mix all together, squash with your hands in a ball, then flatten out on a lined baking tray as one circle or 2 smaller rounds. Make it as thick or thin as you wish. I like mine crispier so the thinner the better 🙂 Bake in a preheated oven at 200C for about 15mins. Eat hot, cool or cold. Enjoy!
*Almond meal or any meal can be substituted
Eggs can replace the yoghurt and tahini too
