Broccoli Bites11th July, 2022
1 cup almond meal
1.5 cups parmesan cheese (a mix of parmesan & pecorino gives great flavour)
3 cups broccoli – par cooked and chopped
1 tsp oregano – fresh or dried
Salt & Pepper
Preheat oven to 180 degrees.
Mix the whole lot together and then easiest thing is to put on some gloves and ‘form’ quite firmly into tablespoon size balls.
Place on baking paper on a tray and cook for 25 minutes or until golden.
Delicious as a snack, or several together with a salad as a lunch/dinner.
Freeze really well. Serve warm (best) or cold.
Make smaller if you wanted to serve them as finger food.
