Chicken Curry Salad

3 cups cooked chicken (poached is best)
¾ cup of good mayonnaise.
Toast:
1/3 cup roughly chopped pecans
1/3 cup EACH of sunflower seeds and pepitas
Into a bowl place:
The chicken, mayonnaise and toasted nuts
ADD
¼ cup currants
2 tbsp finely chopped red onion
2 tbsp finely chopped shallots
2 tbsp finely chopped parsley
2 tbsp finely chopped mint
2 tbsp maple syrup
1 tbsp curry powder
¼ tsp whole cumin seeds
1 tsp sea salt
Freshly ground black pepper

Blend all ingredients together well and either serve as a stand alone salad or use baby cos lettuce leaves and serve the chicken wrapped in these!
Notes:

For a family I would recommend that you double this recipe!

You can omit the maple syrup if preferred – or use honey
You can swap out the pecans and use walnuts
You can swap the currants with sultanas or raisins if preferred.
