Protein Oat & Berry Slice
24th July, 20241 cup mixed berries, frozen
2 tbs chia seeds
1 tbs lemon juice
6 medium ripe bananas, mashed
250g Oats
2 eggs, lightly beaten
1 tbs pepita
1 tbs sunflower seeds
1 tbs sesame seeds
2 tbs peanut butter
* I also add in some protein powder as well. I use Whole Body Collagen by
Designs for Health as it’s tasteless. I also sometimes add Cacao nibs. You
can pretty much put anything you like into it.
1. Preheat oven to 180C. Grease a 2L oven proof dish. Place berries in a
small pan over medium heat. Stir occasionally for 5 minutes or until the
berries break down & release their juices. Stir in the chia seeds and lemon
juice. Set aside to cool.
2. Place bananas, oats, eggs, pepitas, sunflower seeds, sesame seeds in a
bowl and stir until well combined. Pour into prepared dish & smooth the
surface. Top with dollops of berry mixture and peanut butter and use a round
bladed knife to marble.
3. Bake for 25-30 minutes or until firm to touch. Set aside to cook. Cut into
pieces to serve.
