Recipe of the month – Fried rice paper rolls

Quick, crunchy snack or dinner – depends on how many you make!! Please add more ingredients and be fancy if you wish, but I did say “quick”! eg: kale, spring onions, coriander, mint……..


  • Cooked chicken
  • Grated zucchini
  • Grated carrot
  • Dairy free mozzarella – must include…!
  • Packet rice paper sheets Soak rice paper sheets in warm water then lay on board.

Place chicken pieces, veggies and sliced mozzarella in a line, then roll up in the sheet tucking in the ends. Soak another sheet and roll this around your existing chicken roll. Got to have 2 sheets for the crunch! Once all rolls are made, cook in melted ghee, coconut or another oil in a pan to shallow fry. Serve with crunchy peanut butter, tahini, chilli or any mix sauce Eat and crunch away and tell me what you think. Enjoy 🙂
